Enrico Serafino has been applying parcel-based winemaking since the birth of the Alta Langa DOCG. Parcellaire is obtained from the selection of some parcels that best represent the typically “scathing” character of the denomination. The dosage, deliberately reduced in sugars, combined with the absence of distillates, eliminates any interference between the wine and its territory of origin.
